How do you handle a situation where you set a date and the girl keeps wanting to txt between then?
It’s a good sign. Means she likes you. Just text her the way you’ve been doing here and there. Just take a bit to reply (maybe a few hours) and it’ll make her anticipate the meet up even more

its a fine balance and I almost posted this same thread at start of quarantine, because some girls are super chatty nowadays. dont be at her every beck and call, but get back to her. if shes texting you a minute after you respond, consistently, and you respond 12 hours later every time, contrary to popular belief she will eventually get tired of it. try if you dont believe
be flirty, send 'low energy texts' (think how Alex manages to say so much w so little), pictures go a long way too. eg instead of saying 'blah blah blah, I did this today, yap yap yap' just send a picture. I do this alot w my workout eqpt, cooking, motorcycle, etc.
it will mostly be a mix of 'get to know you' and 'what are u up to'
if you do it right, it can dramatically decrease time needed to get her comfortable in person
ideally you do prefer text for logistics and some vibing, but some girls are a little more clingy. adapt to the situation
