So I'm not sure whether you made plans on what to actually do during the date, like split some wine, or cook together etc. If you didn't then this is not a good soft close. A shitty reason to meet is so much better than no reason at all.
Then, she just likes the soft close message, which is weak at best. You were too eager and tried to move to text when she was meh to the soft close. I'd have given it a day and said "If you're nervous I'd understand" or "you don't sound too excited" and handle objections before asking for a phone number.
I think you have to now work towards a soft close again since the convo has totally deviated. I'd go with "That's very cool. Sounds like a stressful job" and vibe to another soft close.
